Spelt Ribbons Pasta with Sautéed Dandelion Greens and Mushrooms

Spelt pasta is high in fiber and a good source of protein. It is an ancient wheat like Kamut {another favorite!} and far healthier than pastas made from refined wheat and white flour; likely genetically modified as well.
For todays dinner I tried some delicious Eden's Spelt Ribbons Pasta with sautéed dandelion greens {leaves of the plant} and mushrooms. Eden's spelt pasta never disappoints. I have tried their spaghetti and spiral pastas which were equally delicious as well.

The taste of dandelion resembles a slightly bitter green like arugula. You can eat them fresh in salads, or cook them on the stove like I did. They are rich in many nutrients and low in calories. The leaves contains a good amount of fiber as well as vitamin K, vitamin A and vitamin C.

If you have never tried any type of spelt pasta you are certainly missing out. I prefer Eden's Organic Pasta but there are other brands that may be just as good.
Here are the ingredients I used for this recipe:

1 Box spelt ribbons pasta
1 Bunch fresh dandelion leaves {remove the bigger parts of stems}
1 Pkg. sliced mushrooms
2 Bunches of green onions {chopped}
1 Yellow onion {chopped}
1 Tsp. basil, thyme, ground fennel {season to your own taste preference}
1/2 Tsp sea salt flakes
2 Tbsp. vegetable broth or water
Cook the pasta according to directions. Usually only takes about 5 minutes to boil {cook until desired tenderness}. Drain and set aside.
Heat skillet for vegetables. Add the broth or water to sauté the onions. Then add the mushrooms and the spices.
Once the mushrooms have finished cooking, add the dandelion leaves. The juice from the mushrooms and the seasoning will add a nice flavor to the greens as they are very bitter. You may need to add more seasoning. The vegetables are finished cooking once the dandelion leaves have wilted down.

You can serve the vegetables separately from the pasta and add on top of the pasta when serving or mix it in with the cooked pastas. Enjoy!
