Roasted Veggies with Smoked Apple Sausage

I love trying out new plant-based recipes but sometimes you just feel like sticking to what you know and what works. My roasted veggies always work for me especially in a pinch because I'm always stocked with at least a few good veggies. Prepping the vegetables is the fun part. A lot of washing, drying and chopping but so worth it. The finished result is a brightly colored mix of healthy goodness on your plate!
Once everything is prepped I spray a large baking pan with oil. Toss the veggies on the pan, season well and in the oven it goes. Never fails. Always quite delicious! I change up the veggies depending on what I have on hand.
What really makes this meal more hearty is adding in a plant-based meat alternative. One of my favorites is Field Roast Smoked Apple Sage Flavor Sausage. No worries it's vegan. Made from grains, vegetables and seasonings. It is also soy-free and GMO-free.
I usually slice it up and season along with the veggies. I allow the veggies and sausage to bake between 25-30 minutes depending on the type of vegetables {potatoes take longer}. The corn on the cob always tastes the best!
Ingredients
Choose your favorite vegetables and chop to similar sizes for even cooking {ideas: zucchini, squash, cherry tomatoes, onions, corn on the cob, bell peppers, brussel sprouts, new potatoes}.
Field Roast Smoked Apple Sage flavor vegan sausage
Grapeseed, Olive, or Avocado oil {I switch it up}
Seasoning {sea salt, pepper, Italian seasoning, garlic powder}
Directions
Oil a large baking pan. Set aside.
Chop the vegetables {cut the corn on the cob into smaller chunks} and sausage.
Add them to the pan and season well {I drizzle a little oil over the veggies and toss}
Bake in oven on 350º until desired tenderness {25-30 minutes}.
