Spelt is one of the ancient grains listed on Dr. Sebi's Nutritional Guide. It's popularity has been revived mainly due to modern organic farming. I have previously used spelt in many of my own recipes, like my Spelt Tortilla Bowls, and my Spelt Pasta w/Seasoned Kale and Avocado Dressing. I haven't experienced a recipe yet that has failed to taste delicious, using spelt as a main ingredient. These spelt vegan waffles were no different. They were totally delicious!

"The zoo keeper doesn't feed the gorilla the food of the polar bear, am I right? So, how come we eat the food of everybody?" -Dr. Sebi

Ingredients

2 ½ cups spelt flour

3 tablespoons date sugar {try my homemade recipe}

½ teaspoon sea salt

1 ½ cups hemp milk {try my homemade recipe}

1 cup spring water

3 tablespoons hemp seed oil

Instructions In large mixing bowl, whisk together flour, sugar and salt.

Add hemp milk, water and oil. Stir until mixed well. A thick batter is best for waffles.

Pre-heat waffle maker on preferred setting {I set mine to 3} and brush with oil only once for all waffles.

When waffle maker is ready to use add 1/2 cup of batter to center of waffle maker.

Waffle is ready when green light appears.

Repeat with remaining batter.

Serve warm with pure agave cactus syrup drizzled on top.

Serves 4-6. Hope you try it and Enjoy!

NOTE: Spelt contains a moderate amount of gluten. This makes it unsuitable for people with gluten-related disorders, such as celiac disease, non-celiac gluten sensitivity, and wheat allergy.

Here is my youtube video on how I made these delicious Spelt Waffles! :-)
