KAMUT VEGETABLE PASTA WITH VEGAN ALFREDO SAUCE

I'm so in love with ancient grain pastas like Kamut. Kamut (pronounced ka-moot) is the trademarked name given to khorasan wheat, an ancient grain type of pasta. It's high in protein than the regular old wheat pasta which I have tried and never acquired a taste for at all. The taste of Kamut pasta is surprisedly quite delicious and even comparable to that of traditional pasta, but with the benefit of being more healthier, of course.

Along with the great taste, Kamut has many health benefits as well. To name a few, it is high in fiber, which helps the digestion system, high source of protein, and it aids in lowering cholesterol.

Note: This pasta does contain gluten. I have no major issues with gluten but I do try to cook gluten-free as much as possible.

Ingredients

12 oz box of organic whole grain kamut pasta {I used Eden Kamut Spirals}

10 oz bag of frozen kale

8 oz pkg mushrooms {sliced}

1 onion {sliced into strips}

1 tbsp grapeseed oil {or another healthy oil of your choice}

1/2 tsp of basil, oregano, sea salt & pepper {add more or less for taste}

Sauce

18 oz Victoria Vegan alfredo sauce {I only used 9 oz/half of the jar}

Directions

Add pasta to a rolling boil of water {enough water to cover pasta}

Boil 7-10 mins for desired tenderness or according to pkg directions { 7 mins was perfect for me!}

Drain and put cooked pasta aside in a large bowl

Add a tablespoon of oil to a skillet. First, add the onions and cook over moderate heat until they become softened and transparent, about 5 minutes. Then add the mushrooms to the same skillet and sauté until softened, another 5 minutes.

Add the kale to the skillet and cook for about 2 minutes {if using fresh kale remember to massage the kale for less bitter taste}.

Add the pasta sauce and simmer for about 5 minutes.

Lastly, add the cooked kamut and seasonings to the skillet and toss over low heat until the pasta is coated well with the sauce. Allow the ingredients to marinate for a few minutes.

Remove from the heat. Oh yes! My Kamut Vegetable Pasta with the Victoria Vegan Alfredo Sauce was quite YUMMY! :-) Serves 4-6. Hope you try it and Enjoy!
